So, not that you could tell this is a blueberry cookie (thanks awful yellow lighting) but… my recipe:
- .25c raw cashews soaked overnight
- .25c raw cashews ground into flour
- 1.5c shredded unsweetened coconut
- .75c sweetener (whatever you like should work)
- 1c blueberries, run through food processor
Yield: 12 cookies about 2” diameter and .25” thick.
I think I dehydrated them somewhere between 4 and 6 hours, but I wasn’t paying attention, I just kept checking while I was working. Last time I think I used .25c cashews and a tablespoon of coconut oil, I think I preferred that.
